Where to find ingredients
Local grocery stores or markets in Zambia typically carry fresh potatoes, eggs, canned tuna, fresh vegetables like tomatoes, onions, peppers, garlic, and herbs such as oregano. Use the vegetable and canned sections for these ingredients, and look for olive oil in the cooking oils aisle.
Preparation method
- In a bowl, mix the mashed potatoes, eggs, and 1/2 tablespoon of olive oil. Set aside.
- In a pan, heat 2 tablespoons of olive oil and sauté the mashed garlic.
- Add the chopped onion and sauté until translucent.
- Add the chopped tomato and sliced bell pepper. Season with salt, pepper, and oregano.
- Pour in 1/2 cup of water and cook for about 5 minutes, until vegetables soften.
- Mix the shredded tuna into the pan and cook for another 3 minutes, stirring well to get a thick sauce.
