Ingredients
1 packet of unflavored powdered gelatin
6 tablespoons of cold water
1 can of sweetened condensed milk
1 can of whole milk (use the empty condensed milk can as a measure)
2 cups of plain yogurt
6 medium-sized red guavas
1/2 cup of granulated sugar
1 1/2 cups of water (for the syrup)
1/2 cup of water (optional, to adjust syrup consistency)
6 tablespoons of cold water
1 can of sweetened condensed milk
1 can of whole milk (use the empty condensed milk can as a measure)
2 cups of plain yogurt
6 medium-sized red guavas
1/2 cup of granulated sugar
1 1/2 cups of water (for the syrup)
1/2 cup of water (optional, to adjust syrup consistency)
Where to find ingredients
You can find fresh produce like guavas at local farmers' markets or the produce section of supermarkets. Dairy products and gelatin are standard items in the baking and dairy aisles of major grocery stores.
Preparation method
- Hydrate the gelatin powder in the 6 tablespoons of cold water.
- Place the hydrated gelatin over a bain-marie until it is completely dissolved.
- In a blender, process the condensed milk, whole milk, plain yogurt, and the dissolved gelatin until smooth.
- Pour the mixture into a ring mold that has been lightly moistened with water.
- Refrigerate for approximately 4 hours, or until the flan is firm and set.
- While the flan sets, prepare the syrup: peel the guavas and cut them into cubes.
- Place the guava cubes in a saucepan along with the sugar and 1 1/2 cups of water.
- Simmer over low heat for about 20 minutes, until the guavas are tender and beginning to break down.
- Remove from heat and transfer the mixture to a blender, processing until you have a smooth purée.
- Return the guava purée to the saucepan and cook over low heat for another 15 minutes, stirring occasionally, until the syrup thickens.
- If the syrup becomes too thick during cooking, add the optional 1/2 cup of water to reach your desired consistency.
- Allow the guava syrup to cool completely before drizzling it over the unmolded flan.
