1 cup sugar

Where to find ingredients
You can find sweetened condensed milk, table cream, and passion fruit in the baking and international aisles of local supermarkets across Samoa, or at specialty grocers carrying tropical and imported goods. As a substitute for table cream, you may use heavy whipping cream or fresh cream.
Preparation method
- Pour the sweetened condensed milk, table cream, and concentrated passion fruit juice into a blender
- Blend until the mixture is completely smooth and creamy
- Transfer the mixture to a nice serving dish or individual ramekins
- Chill in the refrigerator for at least 2 hours, or until thoroughly set
- If you want to speed things up, you can place it in the freezer for about 30 to 40 minutes
- While the mousse chills, make the syrup: combine the sugar and water in a saucepan
- Set over medium heat and cook until the sugar dissolves and forms a light syrup
- Stir the passion fruit pulp gently into the syrup
- Cook for another 1 or 2 minutes, just long enough to warm through and meld the flavors
- Remove from the heat
- Once the mousse has set firmly, spoon the passion fruit syrup over the top right before serving
