Where to find ingredients
Wheat flour, breadcrumbs, long-life or fresh milk, oil, sugar, salt and eggs are everyday supermarket goods in Vanuatu. Fresh baker’s yeast may be in the chilled bakery section; if it is not stocked, check a bakery supplier or a larger supermarket with baking ingredients.
Preparation method
- Put the warm milk, yeast, oil, sugar, salt and eggs in a blender and blend well until smooth
- Pour the blender mixture into a large bowl and add the wheat flour little by little, kneading until the dough is smooth and elastic
- Divide the dough into two equal portions
- Grease the tins with oil and dust with breadcrumbs, placing one portion of dough in each tin
- Leave the dough to rest in a sheltered warm place until doubled in size
- Microwave one tin at a time for 7 to 9 minutes, adjusting according to your appliance’s power
- Turn the bread out while still warm onto a plate
Observations
This microwave bread is a practical Brazilian-style option for making fresh loaves without relying on a conventional oven. The dough uses basic ingredients and is kneaded until smooth before resting, so the finished bread stays soft and pleasant for breakfast or an afternoon snack. Cook one tin at a time and adjust the timing to suit the strength of your microwave.
