1 small cup (café size) flaxseeds
2 standard-sized glasses (requeijão glass capacity) wholemeal wheat flour
All-purpose wheat flour (as needed to reach the right consistency)
25 g fresh baker's yeast
100 ml vegetable oil
1 dessertspoon salt
2 tablespoons brown sugar
1 cup rolled oats
1/2 cup wheat germ
1 small cup (café size) flaxseeds

Where to find ingredients
You can find fresh baker's yeast, wholemeal flour, and seeds in the baking aisles of local supermarkets or markets in Port Vila. If you cannot find fresh yeast, you may substitute it with 10g of active dry yeast. 'Requeijão' glasses are common standard-sized glass measures in Brazil; you can use a 250ml measuring cup as an equivalent.
Preparation method
- In a large mixing bowl, dissolve the fresh baker's yeast in the warm water.
- Add the brown sugar and stir well to combine.
- Stir in the vegetable oil, salt, rolled oats, wheat germ, and flaxseeds.
- Gradually incorporate the wholemeal wheat flour, mixing until the dough is uniform.
- Add more all-purpose flour, bit by bit, until the dough pulls away from your hands while remaining soft.
- Transfer the dough onto a clean, floured work surface.
- Knead the dough vigorously for about 10 to 15 minutes, until it becomes smooth and elastic.
- Place the dough in a lightly greased or floured bowl, cover with a cloth, and let it rise in a warm spot until it has doubled in volume (approximately 1 to 2 hours).
- Once risen, shape the dough into your desired loaf format.
- Place the shaped dough into a greased and floured loaf tin or one lined with parchment paper.
- Cover the loaves again with a cloth and let them rise for another 30 to 60 minutes.
- Preheat your oven to 200°C.
- Bake in the preheated oven at 200°C for approximately 25 to 30 minutes, or until golden brown and cooked through. Cooking time may vary depending on your oven.
- Remove the bread from the oven and let it cool on a wire rack before serving.
