Where to find ingredients
Vegetable oil and standard tinned vegetables like corn and peas are widely available in any local supermarket. For ingredients like hearts of palm (palmitos) and fine cornmeal (farinha de milho fina), check the international or 'ethnic' food aisle in larger grocery stores. Cassava flour (farinha de mandioca) can usually be found at specialized Latin American or Caribbean shops. If you cannot find fine cassava flour, look for 'manioc flour' in international markets, which is the essential base for this dish.
Preparation method
- Prepare the mould: Line the bottom and sides of a pudding or cake mould with tomato slices, boiled egg slices, and a few sardine fillets for a beautiful presentation
- Sauté the base: Heat the vegetable oil in a large pot and sauté the chopped tomatoes and bell peppers until they soften
- Combine the fillings: Add the chopped heart of palm, peas, sweet corn, chopped eggs, flaked sardines, and the chopped chilli. Mix everything together well
- Create the broth: Dissolve the 6 stock cubes in 4 cups of boiling water and pour this over the ingredient mix in the pot. Let it boil for a few minutes
- Incorporate the flours: Gradually add the fine cornmeal and cassava flour, stirring constantly to prevent lumps, until you reach a firm and uniform mass
- Cook the mixture: Continue cooking and stirring for about 5 to 10 minutes, until the mixture thickens significantly and pulls away cleanly from the bottom of the pot
- Mould the dish: Spoon the mixture into your prepared mould, using a spatula to press it down gently and ensure it is compact
- Unmould and serve: Once it has cooled slightly, turn the mould over onto a serving plate. Decorate with the black olives and serve immediately
