Salt to taste
Black pepper to taste
5 cups water
1 liter vegetable oil for frying
1 cup milharina (fine yellow cornmeal)
Salt to taste
Black pepper to taste
5 cups water
Where to find ingredients
You can find milharina at local supermarkets in the grains or specialty food aisle. If unavailable, fine yellow cornmeal is the best substitute. Use neutral-flavored vegetable oil for frying and ensure your pot is heavy-bottomed for even heat distribution.
Preparation method
- Pour the water into a saucepan and place over medium heat until it comes to a boil.
- Gradually add the milharina while stirring constantly to prevent any lumps from forming.
- Season the mixture with salt and black pepper to your preference.
- Continue to cook and stir until the mixture thickens and begins to pull away from the bottom of the pan, which should take about 15 minutes.
- Remove from the heat and let the polenta rest in the pot for a few minutes.
- Lightly grease a baking dish or tray with a touch of oil or olive oil.
- Transfer the warm polenta to the tray, smooth out the surface using the back of a spoon, and allow it to cool completely.
- Once cooled, cover and refrigerate for at least one hour, or preferably overnight, to firm up.
- Heat the vegetable oil in a deep frying pan or pot until it reaches approximately 180°C.
- Remove the chilled polenta from the fridge, invert the tray onto a cutting board, and turn it out.
- Slice the firm block of polenta into sticks or squares of uniform size.
- Fry the pieces in the hot oil in small batches for about 10 minutes, or until they turn golden brown and crisp.
- Remove the pieces using a slotted spoon and place them on paper towels to drain any excess oil.
- Serve immediately while hot, either as a tasty snack or a classic side dish.
