Ingredients
100 g of dehydrated grated coconut
120 ml of warm water
4 eggs
3 egg yolks
480 g of sugar
30 g of butter
120 ml of warm water
4 eggs
3 egg yolks
480 g of sugar
30 g of butter
Where to find ingredients
You can find these ingredients at local supermarkets, groceries, or general food markets in Kampala. If you cannot find pre-shredded coconut, fresh coconut can be grated finely as a substitute.
Preparation method
- Combine the grated coconut and warm water in a small bowl
- Let the coconut rest for about 5 minutes until it is well hydrated
- Place the hydrated coconut, whole eggs, egg yolks, sugar, and butter into a blender and blend just enough to mix
- Grease a 1.5-liter microwave-safe dish with butter and dust with sugar, then pour in the mixture
- Cook in the microwave on medium power for 9 to 12 minutes until the quindão starts to set
- Remove from the microwave, let it cool slightly, and carefully unmold onto a serving plate
- Wait for it to cool completely before serving to ensure the ideal texture
Observations
The quindão is a popular, larger version of the traditional Brazilian quindim. This simplified method uses the microwave to ensure speed without sacrificing the characteristic coconut and egg flavor. Pro tip: use a microwave-safe mold to ensure even cooking.
