Bread Pudding (Pudim de pão)

Ingredients

2 tbsp sugar, for the caramel
3 day-old bread rolls
500 ml milk
3 whole eggs
2 cups sugar
1 dessert spoon lemon zest

Where to find ingredients

Look for the bread, milk, eggs and lemons in the bakery, dairy aisle, eggs section and produce market. Sugar is usually available in the grocery dry goods section.

Preparation method

  1. Prepare the caramel by melting the 2 tbsp of sugar in a large ring mould
  2. Spread the caramel well over the base and sides of the mould
  3. Cut the bread rolls into slices about 2 cm thick
  4. Arrange the bread slices in the base of the caramel-coated mould
  5. Blend the milk, eggs and 2 cups of sugar in a blender until smooth
  6. Stir the lemon zest into the liquid
  7. Pour the mixture over the pieces of bread in the mould
  8. Bake in a preheated oven in a water bath for 30 minutes
  9. Remove from the oven and let it cool slightly before carefully turning out

Observations

This recipe turns simple ingredients into a creamy, comforting dessert. The key is to let the bread soak up the mixture well before baking.
