Ingredients
1/2 cup uncooked rice
1 egg
1 tablespoon chopped parsley
1 tablespoon chopped cilantro
1/2 tablespoon chopped chives
1 1/2 cups all-purpose flour
Salt to taste
Water, enough to cook the rice
8 tablespoons vegetable oil (for cooking the dough and boiling with the water)
1 egg
1 tablespoon chopped parsley
1 tablespoon chopped cilantro
1/2 tablespoon chopped chives
1 1/2 cups all-purpose flour
Salt to taste
Water, enough to cook the rice
8 tablespoons vegetable oil (for cooking the dough and boiling with the water)
Where to find ingredients
Look for the ingredients in the rice, fresh herbs, baking staples, and oil sections of a grocery store or supermarket. If needed, you can use a plain vegetable oil as a substitute for the vegetable oil in the recipe.
Preparation method
- Cook the rice in salted water until very soft
- Drain off any excess water, if there is any
- In a blender, blend the cooked rice with the egg, parsley, cilantro, and chopped chives until smooth
- Transfer the dough to a pan
- Add the all-purpose flour little by little, mixing as you go
- Set the pan over low heat and cook the dough, stirring constantly, until it pulls away completely from the bottom of the pan and forms a ball
- Season with salt to taste
- Remove the dough from the pan and let it cool slightly
- On a clean, lightly floured surface, shape the dough into a log about 2 cm in diameter
- Cut the gnocchi into pieces about 2 cm long
- In a large pan, bring plenty of salted water and about 4 tablespoons of oil to a boil
- Add the gnocchi to the boiling water a few at a time so they do not stick together
- Remove the gnocchi from the water as soon as they float to the surface, which means they are cooked
- Drain the cooked gnocchi and, if you like, finish by sautéing them in a skillet with the remaining vegetable oil or serve them straight away with the sauce of your choice
Observations
Rice gnocchi is an interesting variation on traditional Italian pasta, adapted to Brazilian tastes and made with rice as the base. This homemade recipe is a great choice for anyone looking for something different, flavorful, and relatively easy to prepare. The mix of cooked rice, egg, fresh herbs, and all-purpose flour creates soft gnocchi with a special touch, perfect for serving with the sauce of your choice.
