Where to find ingredients
Fresh shrimp and garlic can be found at local fish markets and grocery produce aisles. Cassava (yuca) is available in the produce or frozen sections of specialty supermarkets. Annatto powder (colorau) and coconut milk are common in the baking or international food aisles. Monosodium glutamate and seasoning powder are widely available in the spice section of any grocery store.
Preparation method
- Wash the shrimp thoroughly
- Heat the oil or margarine in a large pot over medium heat
- Sauté the whole shrimp, including the heads, in the hot fat until they turn bright red
- Remove the shrimp from the pot and set them aside on a plate to cool
- Peel the cassava, cut it into pieces, and place them in a blender
- Add the coconut milk to the blender
- Add the sautéed shrimp heads to the blender
- Set aside 250 g of the cooked, peeled, and headless shrimp, then add the rest to the blender
- Pour 1/2 liter of water into the blender and blend until you achieve a smooth mixture
- In the same pot used to fry the shrimp, add the minced garlic and sauté until golden
- Stir in the seasoning powder, annatto powder, salt, and monosodium glutamate if using
- Sauté the seasonings for a few moments
- Pour the blended mixture from the blender into the pot with the sautéed seasonings
- Stir well and add more water if necessary to adjust the consistency, ensuring it does not become too thick
- Cook for about 15 minutes over low heat, stirring occasionally
- At the end of the cooking time, stir in the brandy, mix well, and remove from the heat
