1/2 red bell pepper
1/2 red onion
1 garlic clove
1 can of peeled diced tomatoes (with the liquid)
2/3 cup of water
1 tablespoon of olive oil
1/2 teaspoon of cumin seeds
Salt and freshly ground black pepper to taste
1/2 red bell pepper
1/2 red onion
1 garlic clove
1 can of peeled diced tomatoes (with the liquid)
2/3 cup of water
1 tablespoon of olive oil
1/2 teaspoon of cumin seeds
Salt and freshly ground black pepper to taste
Where to find ingredients
You can find all ingredients at local supermarkets and produce markets. Okra can be sourced fresh; if unavailable, frozen okra is a possible substitute for the fresh one.
Preparation method
- Wash the okra and dry them carefully with a clean kitchen towel
- Trim the ends and slice each okra on the diagonal into 1 cm pieces
- Set the sliced okra aside
- Mince the onion and garlic into very small pieces
- Cut the bell pepper in half, remove the seeds and dice half of it into 1 cm cubes
- Lightly crush the cumin seeds in a mortar and pestle to release their aroma
- Heat a medium saucepan over medium heat with the olive oil
- Add the onion and bell pepper
- Season with a pinch of salt and sauté for 3 minutes until the vegetables soften
- Add the garlic and crushed cumin
- Stir everything for 1 minute until fragrant
- Pour in the water and mix well to loosen the flavor from the bottom of the pan
- Incorporate the peeled tomatoes with their liquid
- Season with 1 teaspoon of salt and black pepper to taste
- Bring the mixture to a boil over medium heat
- Reduce the heat and cook for 5 minutes, stirring occasionally until the sauce thickens
- Add the sliced okra to the pan
- Cook for another 6 minutes, stirring from time to time, until the okra is slightly tender
- Avoid overcooking so the okra maintains the ideal texture
- Serve immediately
