500 g green beans (feijão verde)
2 beef stock cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon fresh coriander, chopped
2 1/2 cups white rice
150 g queijo coalho, thinly sliced
Where to find ingredients
Find green beans, paio sausage, and queijo coalho at local butchers or specialized artisanal food markets. In supermarkets, check the fresh produce section for herbs and the chilled deli aisle for traditional Brazilian cheeses and cured sausages.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a pot with the 2.5 litres of cold water and beef stock cubes.
- Cover the pot and simmer over low heat for approximately 1 hour, or until the beans are tender.
- While the beans are simmering, heat the vegetable oil in a separate large pot.
- Sauté the sliced paio, grated onion, and crushed garlic in the oil until golden brown.
- Add the rinsed and drained rice along with the chopped coriander to the pot, sautéing for a few minutes to toast the grains.
- Pour the cooked beans along with their cooking liquid into the pot with the rice.
- Stir all ingredients together, cover, and cook on low heat until the rice is tender and the mixture reaches a moist, creamy consistency.
- Arrange the slices of queijo coalho over the top of the rice mixture.
- Cover the pot once more and let it rest for a few minutes to allow the residual steam to melt the cheese.
- Serve your Baião de Dois warm, optionally accompanied by fried or roasted carne-de-sol.
