1 cup rice
2 cups water
1 tablespoon olive oil
1/2 onion
1 bay leaf
1/2 teaspoon salt
Zest of 1 Tahiti lime
2 cups water
1 tablespoon olive oil

Zest of 1 Tahiti lime
Where to find ingredients
Rice, olive oil, bay leaves and salt are easy to find in supermarkets and general food shops. Onion and Tahiti lime can be found in supermarkets, markets and greengrocers. If Tahiti lime is not available, use a fresh lime as a substitute, keeping Tahiti lime as ideal.
Preparation method
- Peel the onion and chop it into very small pieces
- Place the water in a kettle and heat over low heat until boiling
- Heat a medium pan over low heat
- Add the olive oil and chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion is soft
- Add the bay leaf and rice to the pan
- Stir for about 1 minute so the grains are coated in olive oil, which helps keep the rice fluffy
- Measure 2 cups of the boiling water and pour it over the rice
- Season with the remaining salt and mix
- Increase the heat to medium
- Avoid stirring from this point on
- Wait for the water to dry until it reaches the level of the grains
- Lower the heat and partially cover the pan
- Cook until all the water is absorbed
- Check the bottom of the pan with a fork to confirm that the water has dried completely
- Turn off the heat
- Add the lime zest
- Cover the pan completely
- Let the rice rest in the steam for 5 minutes
- Use a fork to loosen the grains and incorporate the zest
- Transfer to a bowl and serve immediately
