1 cup water
1 teaspoon vanilla essence
3 eggs, well beaten
Oil for frying
Sugar and ground cinnamon for sprinkling
1 tin condensed milk
1 cup water

3 eggs, well beaten
Oil for frying
Sugar and ground cinnamon for sprinkling
Where to find ingredients
In Eswatini, look for sliced bread, condensed milk, eggs, vanilla essence, sugar and ground cinnamon in supermarkets, grocery shops and bakery aisles. Cooking oil is usually in the staples aisle; day-old bread can often be bought from a bakery counter or kept from the previous day.
Preparation method
- Cut each slice of bread into four equal pieces
- Make a mixture in a deep bowl by combining the condensed milk with the water and vanilla essence
- Dip the pieces of bread into the liquid mixture, allowing them to become well soaked
- Dip each moistened piece into the eggs that have already been beaten
- Lift it out of the egg and wait a few moments so the excess liquid can drain off
- Heat the oil and fry the rabanadas, keeping the temperature moderate so they brown evenly
- Transfer the rabanadas to a dish lined with kitchen paper to remove excess oil
- Finish by sprinkling a mixture of sugar and cinnamon over the slices while they are still warm before serving
Observations
This version uses sliced bread to make neat, delicate pieces. For the best result, let the bread take up the milk mixture properly before frying, then keep the oil at a moderate heat so the pieces brown evenly and hold a soft texture.
