Ingredients
800 g flank steak
Salt to taste
2 tablespoons oil
1 rosemary sprig
4 garlic cloves, chopped
1 onion, cut
Thyme to taste
1 tablespoon tomato paste
1 can beer
Salt to taste
2 tablespoons oil
1 rosemary sprig
4 garlic cloves, chopped
1 onion, cut
Thyme to taste
1 tablespoon tomato paste
1 can beer
Where to find ingredients
Flank steak can be found at butchers and supermarket meat counters. Beer, garlic, onion, rosemary, thyme, tomato paste, oil and salt are available in supermarkets and general food shops. If flank steak is unavailable, use another suitable braising beef cut as a substitute, keeping flank steak as ideal.
Preparation method
- Clean the flank steak and season the whole piece with salt
- Heat the oil in a pan and add the rosemary sprig to flavour it
- Place the meat in the pan and sear all sides until well browned
- Add the garlic, onion and thyme to the pan
- Sauté the vegetables for about 3 minutes
- Pour the beer and tomato paste over the meat
- Keep over low heat for 30 minutes
- Check the liquid level and add hot water little by little if needed to maintain the cooking
- Remove the meat from the pan and keep it warm
- Strain the sauce left in the pan
- Place the sauce over high heat to reduce until it reaches the desired consistency
- Slice the meat, arrange on a serving dish and drizzle with the reduced sauce before serving
Observations
This recipe turns simple beef cuts into a refined dish. The secret is browning the meat well before starting the slow cooking with the sauce.
