Where to find ingredients
You can find fresh produce, bulgur wheat, and quality herbs at local markets or grocery stores in Koror. If you cannot find bulgur wheat, cracked wheat is the best substitute.
Preparation method
- Place the bulgur in a medium mixing bowl.
- Cover with water and let it soak to hydrate for 2 hours.
- Rinse the soaked bulgur under cold running water.
- Drain the bulgur well in a colander.
- Squeeze the bulgur with your hands to remove any excess moisture.
- Rinse the chopped onion under cold water and drain well.
- Combine the bulgur, onion, and all remaining ingredients except the tomatoes.
- Keep the tomatoes separate until the final serving step.
- Cover the bowl and refrigerate for at least 8 hours to develop the flavor.
- Gently fold in the chopped tomatoes just before serving.
Observations
This recipe perfectly balances the texture of wheat with the crispness of fresh vegetables and aromatic herbs. Letting it rest in the refrigerator is essential to allow the flavors to meld together beautifully.
