Ingredients
1 kg kabocha or butternut squash (abóbora de pescoço)
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
Where to find ingredients
You can find fresh produce like squash and garlic at local markets or grocery stores in Koror. If 'abóbora de pescoço' is unavailable, any firm, sweet-fleshed winter squash variety makes a great substitute.
Preparation method
- Peel the pumpkin and cut the flesh into 2 cm cubes.
- Mince the garlic cloves finely.
- Place a large pot or skillet over medium heat with the olive oil.
- Add the garlic and sauté for 1 minute just until fragrant, being careful not to let it burn.
- Add the pumpkin cubes and salt to the pot.
- Stir the ingredients occasionally for 10 minutes, until the pumpkin starts to soften.
- Cover the pot with a lid and reduce the heat to the lowest setting.
- Cook for 5 minutes so the pumpkin finishes softening in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your preferred texture.
- Turn off the heat and serve immediately.
Observations
With a lightly rustic texture, this mash is a practical and wholesome choice to add variety to your everyday meals.
