Olive oil to taste
Salt to taste
Juice of 1/2 lemon
1/2 teaspoon coriander seeds
Olive oil to taste
Salt to taste
Where to find ingredients
Fresh produce can be found in local markets or grocery stores. Coriander seeds are typically available in the spice aisle. As a substitute for fresh coriander seeds, you may use a pinch of ground coriander, though the texture and aromatic intensity will differ.
Preparation method
- Wash the zucchini skin thoroughly under running water using a vegetable brush
- Dry with a clean kitchen towel
- Trim and discard the ends
- Cut the zucchini crosswise to separate the thicker end from the thinner tip
- Slice the thick part in half lengthwise and cut each half into three strips to create sticks
- Divide the thin part in half crosswise so all pieces are of similar size
- Cut each of these pieces into four parts
- Heat a non-stick skillet over medium heat
- Add a drizzle of olive oil and arrange the zucchini pieces with the cut side facing down
- Grill for about 2 minutes until golden brown
- Lightly crush the coriander seeds in a mortar to release the aroma
- Turn the sticks using tongs to brown the opposite side
- Add the coriander seeds, season with salt, and add a little more olive oil
- Sauté for 1 more minute until the zucchini is tender and seasoned
- Finish by turning off the heat and incorporating the lemon juice
- Serve immediately
