500 g green beans (feijão verde)
2 beef stock cubes
3 tbsp vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tbsp fresh cilantro, chopped
2.5 cups long-grain white rice
150 g queijo coalho, thinly sliced
Where to find ingredients
You can find rice, vegetables, and basic spices at any local bazaar or supermarket. For the Brazilian staples: look for 'paio' or a smoked beef sausage as a substitute in the deli or meat section of premium grocery stores. 'Queijo coalho' is a firm, grilling cheese; if unavailable, a slightly salty halloumi or paneer can serve as a suitable substitute to achieve a similar texture.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and cook them in a pot with 2.5 liters of cold water and the beef stock cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the vegetable oil in a separate large pot.
- Sauté the sliced paio, grated onion, and crushed garlic in the oil until golden brown.
- Add the washed and drained rice along with the chopped cilantro, stirring well for a few minutes to toast the grains.
- Pour the cooked beans along with their cooking broth into the rice mixture.
- Combine all ingredients thoroughly, cover the pot, and cook on low heat until the rice is tender and the mixture is moist and creamy.
- Arrange the thin slices of queijo coalho evenly over the top of the rice.
- Cover the pot again and let the residual steam melt the cheese for a few minutes.
- Serve the dish hot, ideally paired with fried or roasted carne-de-sol if desired.
