Parmigiana-Style Baked Rice

Ingredients

2 cups rice
4 cups water
2 chicken stock cubes
3 skinless tomatoes
1 tablespoon tomato paste
2 eggs
3 tablespoons grated cheese
100g chopped ham
100g chopped mozzarella

Where to find ingredients

You can find most of these ingredients in any local grocery store or supermarket in Pakistan. For the chicken stock cubes, look for Knorr or Maggi variants in the baking or spices aisle. For the grated cheese and mozzarella, check the dairy section of your local supermarket. If you prefer, local 'processed cheese' or 'pizza cheese' blends available in dairy aisles work well for the topping. The ham can be substituted with local chicken deli meat or 'chicken mortadella' found at meat shops or the chilled deli section of major supermarkets if pork ham is not available.

Preparation method

  1. Dissolve one of the chicken stock cubes in a little hot water
  2. Place the skinless tomatoes, tomato paste, and the dissolved stock into a blender
  3. Blend everything until you have a smooth, homogeneous sauce
  4. Cook the rice in a pot with the 4 cups of water and the remaining stock cube for 15 minutes
  5. Lightly beat the eggs in a bowl
  6. Mix the grated cheese, chopped ham, and mozzarella into the bowl with the beaten eggs
  7. Fold this mixture into the hot, freshly cooked rice
  8. Spread a portion of the tomato sauce across the bottom of a casserole dish
  9. Spread the rice mixture evenly over the sauce layer
  10. Cover the top of the dish with the remaining tomato sauce
  11. Bake in a preheated oven at 180°C for 10 to 15 minutes until it is beautifully gratinated

Observations

This recipe is a brilliant way to use up leftover rice, turning it into a special one-pot meal. It results in a creamy, golden-brown, and cheesy dish that is perfect for a quick family lunch or a hearty dinner.
