Ingredients
2 cans of white beans (equivalent to 3 cups of cooked beans)
1 red onion
2 tomatoes
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
2 rosemary sprigs (approx. 2 tablespoons fresh leaves)
1 teaspoon salt
Freshly cracked black pepper to taste
1 red onion
2 tomatoes
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
2 rosemary sprigs (approx. 2 tablespoons fresh leaves)
1 teaspoon salt
Freshly cracked black pepper to taste
Where to find ingredients
White beans can be found in the tinned goods aisle of major supermarkets or local specialty grocery stores. Fresh rosemary and produce are best sourced from local greengrocers or the fresh vegetable section. For a substitute, kidney or chickpeas may be used if white beans are unavailable, though the texture profile will differ.
Preparation method
- Open the cans of white beans and drain the liquid into a colander.
- Gently rinse the beans under running water to remove excess sodium and let them drain thoroughly.
- Peel the onion and slice it into thin, 0.5 cm strips.
- Wash the tomatoes thoroughly.
- Cut the tomatoes in half and remove the seeds.
- Dice the tomato halves into 0.5 cm cubes.
- Strip the leaves from the rosemary sprigs.
- In a large skillet off the heat, combine the olive oil, sliced onion, and fresh rosemary leaves.
- Place the skillet over medium heat and warm the mixture for 2 minutes.
- Transfer the skillet mixture into a large mixing bowl.
- Stir in the vinegar, salt, and freshly cracked black pepper.
- Fold in the drained white beans and diced tomatoes.
- Toss everything gently to combine and serve immediately.
Observations
This vinaigrette offers a sophisticated blend of textures and aromas. By infusing rosemary into warm olive oil, the red onion becomes mellowed, while the herb imparts a distinctive, earthy depth to the creamy white beans.
