Ingredients
3 ripe tomatoes
1 tablespoon coarse salt
Freshly cracked black pepper to taste
Extra virgin olive oil to taste
Fresh basil leaves to taste
1 tablespoon coarse salt
Freshly cracked black pepper to taste
Extra virgin olive oil to taste
Fresh basil leaves to taste
Where to find ingredients
You can find fresh, ripe tomatoes and high-quality extra virgin olive oil at local farmers' markets or grocery store produce sections. Fresh basil is widely available in the herb aisle or as potted plants at supermarkets.
Preparation method
- Wash and dry the tomatoes well
- Remove the top of each tomato
- Place the tomato with the cut side facing down on a cutting board
- Cut into the tomato in a cross pattern and then an X pattern to create 8 equal wedges
- Place the tomato pieces in a sieve or colander set over a bowl
- Sprinkle the coarse salt over them and toss well so all pieces are coated
- Cover the container with plastic wrap or a plate
- Refrigerate for 24 hours so the tomatoes can drain and firm up their texture
- If you need to serve them sooner, let them drain for at least 30 minutes
- Remove from the refrigerator right before serving
- Discard the liquid collected in the bowl
- Gently shake the wedges to remove any excess coarse salt
- Arrange the tomatoes on a serving plate
- Finish by seasoning with olive oil and freshly ground black pepper
- Add basil leaves to taste and serve
Observations
This preparation features the tomato as the star of the dish. The salt-draining process improves the texture and intensifies the flavor, resulting in a light and aromatic side dish.
