Ingredients
2 green plantains
2 cups yellow coarse corn flour
75 g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste
2 cups yellow coarse corn flour
75 g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste
Where to find ingredients
Green plantains can be found at local vegetable markets or in the produce section of most supermarkets in Pakistan under the name 'kacha kela' or 'plantain'. For yellow coarse corn flour, check the grains or cereal section of larger supermarkets; if unavailable, look for 'makki ka atta' in local grocery stores, though you need a coarser grind for the true texture of farofa. Butter and vegetable oil are staple items available in all local bazaars and supermarkets.
Preparation method
- Trim the ends of the plantains and peel them
- Cut each plantain in half lengthwise
- Cut each half again lengthwise
- If the strips are too thick, cut them into three pieces
- Slice each piece of plantain into roughly 1 cm cubes
- Heat a large non-stick frying pan over medium heat
- Add the oil to the pan
- Place the diced plantains in the pan and season with a pinch of salt
- Sauté for about 6 minutes, stirring occasionally, until they are lightly caramelized. The timing may vary depending on the ripeness of the plantains; riper ones brown faster
- Lower the heat
- Add the butter cubes to the pan and stir until completely melted
- Season with 1 teaspoon of salt and black pepper to taste
- Add the corn flour gradually, mixing continuously with a spatula to incorporate it well
- Cook for another 4 minutes, stirring constantly, until the farofa is crispy and golden brown
- Turn off the heat and serve the farofa immediately
