Where to find ingredients
In Pakistan, you can find these ingredients at local markets, neighbourhood grocery shops and supermarkets, with chicken breast available from poultry counters and Parmesan or similar hard cheese in the dairy section.
Preparation method
- Separate the whites from the yolks of the 3 eggs.
- Keep the whipped egg whites aside for the end.
- In a blender, blend the plain flour, oil, egg yolks, milk, cooked rice and grated Parmesan cheese.
- Season with salt and black pepper to taste and blend a little more.
- When the batter is smooth, add the baking powder and mix gently.
- Now carefully fold the whipped egg whites into the batter, using a spatula or whisk so the air is not lost.
- Grease a baking tin with oil or butter and dust it with plain flour.
- Pour half of the batter into the prepared tin.
- Spread the seasoned shredded chicken over this first layer of batter.
- Cover the filling with the remaining batter.
- Bake in a preheated oven at 180°C for about 40 to 50 minutes, or until the pie is golden and firm.

This rice pie is one of those dishes that warms the heart and is very easy to make at home, even if you do not have much experience in the kitchen. It combines the lovely flavour of seasoned shredded chicken with a batter that turns creamy and airy, thanks to the whipped egg whites. It is a great way to change up the everyday menu, replace the usual roast chicken, or even take along to a lunch with friends. Make this Brazilian recipe and surprise everyone!
