Ingredients
100g white sugar
2 tablespoons chopped cashew nuts
2 medium papayas, with fresh pulp
250ml chilled all-purpose cream or heavy whipping cream
2 tablespoons chopped cashew nuts
2 medium papayas, with fresh pulp
250ml chilled all-purpose cream or heavy whipping cream
Where to find ingredients
You can find fresh, ripe papayas in any local wet market (palengke) or the produce section of supermarkets like SM or Robinsons. Look for the yellow-orange variety for the best sweetness. Cashew nuts are widely available in the snack or baking aisles of most groceries, often labeled as roasted cashews. For the cream, look for 'all-purpose cream' or 'whipping cream' in the dairy or canned goods section; be sure to chill it in the fridge overnight so it whips properly. If you want that signature Filipino touch, a squeeze of calamansi is a great substitute for lime to balance the sweetness.
Preparation method
- Slice the papayas in half and scoop out all the seeds
- Scoop the flesh out of one papaya and blitz in a blender until you have a smooth puree
- Dice the pulp of the second papaya into small, bite-sized pieces and set aside
- In a mixing bowl, whip the chilled cream with the sugar until you achieve stiff peaks
- Gently fold the papaya puree into the whipped cream, being careful to keep the mixture light and airy
- Add the diced papaya pieces into the mixture and fold them in gently
- Transfer the mixture into a shallow pan or freezer-safe container and keep it in the freezer for at least 4 hours
- To unmold, quickly run the bottom of the container under warm water for a few seconds
- Scoop the sorvete into serving bowls and top with a generous sprinkle of chopped cashews
- Optional: squeeze a few drops of calamansi or lime over each serving for an extra zesty kick
