Light Homemade Feijoada (Feijoada light)

Ingredients

150 g black beans
100 g frozen pork loin
150 g salted pork loin
100 g lean dried beef
2 bay leaves
1 medium onion, chopped
2 garlic cloves, chopped
fresh chopped spring onion and parsley to taste
1 tablespoon light unsalted margarine

Where to find ingredients

Look for the ingredients at local wet markets, supermarket dry-goods aisles, the meat section, and the herbs-and-vegetables corner. If needed, ask for black beans, salted pork cuts, and dried beef at the butcher or meat counter; use a light, unsalted margarine as the closest substitute if that exact product is unavailable.

Preparation method

  1. Soak the black beans in water the day before
  2. The next day, soak the salted meats in water, changing the water several times
  3. Boil the salted meats in clean water and discard the water
  4. Repeat the boiling and discarding process until the meats are less salty
  5. Boil the meats again in clean water. If the water turns greasy, place it in the freezer or refrigerator; the solidified fat on the surface can be skimmed off with a spoon
  6. Use this cooking water to cook the beans
  7. In a pot, cook the black beans with the desalted meats and bay leaves until the beans and meats are tender
  8. While the beans cook, make a sauté in a nonstick skillet with the light margarine
  9. Add the chopped onion and sauté until translucent
  10. Add the chopped garlic and sauté for another minute
  11. Stir the chopped spring onion and parsley into the sauté
  12. Add this sauté to the bean pot
  13. Check the salt and adjust if needed
  14. Serve the feijoada hot

Observations

Feijoada is one of the most emblematic dishes in Brazilian cooking, a rich and savory stew of black beans with a variety of meats. This light version adapts the traditional recipe to make it a little lighter, using lean cuts of meat and techniques that reduce the fat content without compromising its signature flavor.

It is a great choice for anyone who wants to enjoy this classic dish in a healthier way, ideal for a weekend lunch or a comforting meal. The preparation involves soaking the salted meats and cooking everything together until it reaches the perfect consistency.
