Ingredients
2.5 liters of cold water
500g green beans
2 beef bouillon cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 clove of garlic, crushed
1/2 tablespoon fresh coriander, chopped
2 1/2 cups white rice
150g queijo coalho, thinly sliced
500g green beans
2 beef bouillon cubes
3 tablespoons vegetable oil
1 paio sausage, sliced
1 onion, grated
1 clove of garlic, crushed
1/2 tablespoon fresh coriander, chopped
2 1/2 cups white rice
150g queijo coalho, thinly sliced
Where to find ingredients
Find fresh produce and pantry staples at local markets (msika) or supermarkets in town. If you cannot find authentic 'paio' sausage, a high-quality smoked pork sausage is a good substitute. For 'queijo coalho', a firm, salty frying cheese like Halloumi is the closest available substitute, though the original is preferred.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and cook them in a pot with 2.5 liters of cold water and the bouillon cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the vegetable oil in a separate pan.
- Brown the sliced paio, grated onion, and crushed garlic in the hot oil.
- Add the washed and drained rice along with the chopped coriander to the pan, and sauté for a few minutes.
- Combine the cooked beans and their cooking liquid into the rice mixture.
- Stir everything well, cover the pan, and cook on low heat until the rice is tender and the dish is moist and creamy.
- Arrange the thin slices of queijo coalho over the top of the rice.
- Cover the pan again and let the residual steam melt the cheese for a few minutes.
- Serve the Baião de Dois hot, optionally accompanied by fried or roasted carne-de-sol.
