Find fresh produce and pantry staples at local markets or neighborhood grocery stores. Use standard long-grain white rice and fresh limes, which are widely available in fresh produce sections.
Preparation method
- Peel the onion and chop it into very small pieces
- Place the water in a kettle and bring to a simmer over low heat
- Heat a medium saucepan over low heat
- Add the olive oil and chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion softens
- Add the bay leaf and rice to the pan
- Stir for about 1 minute so the grains are coated in oil, which ensures a fluffy result
- Measure 2 cups of the boiling water and pour over the rice
- Season with the remaining salt and stir
- Increase heat to medium
- Avoid stirring from this point on
- Wait for the water to evaporate to the level of the grains
- Reduce heat to low and partially cover the pan
- Cook until all the water has been absorbed
- Check the bottom of the pan with a fork to ensure all water has evaporated
- Turn off the heat
- Add the lime zest
- Cover the pan completely
- Let the rice steam and rest for 5 minutes
- Use a fork to fluff the grains and incorporate the zest
- Transfer to a bowl and serve immediately
