Homemade Doughnuts: A Traditional Sweet Recipe (Sonho)

Ingredients

3 whole eggs
50g fresh yeast
1 cup butter
1 cup granulated sugar (for the dough)
1 pinch of salt
1 cup wheat flour (for the sponge)
1/2 cup milk (for the sponge)
Remaining wheat flour (approx. 7 1/2 cups)
Remaining milk (approx. 1 cup)
Vegetable oil for frying
500ml whole milk (for the custard)
1 1/2 cups granulated sugar (for the custard)
6 egg yolks, passed through a sieve
25g cornstarch
25g wheat flour (for the custard)
40g butter (for the custard)
1 tablespoon vanilla extract
1 tablespoon cocoa liqueur
200g strawberry jam (optional, for filling)
3 standard cups sugar (480g) (for the glaze topping)
1 1/2 standard cups water (300 ml) (for the glaze topping)
1 1/2 tablespoons lemon juice
200g semi-sweet chocolate, chopped
200ml heavy cream
1 tablespoon unsalted butter (for the chocolate topping)

Where to find ingredients

You can find all fresh produce, dairy, and baking supplies at local supermarkets or general grocery stores in the Majuro area. Look for 'all-purpose flour' for wheat flour and 'heavy whipping cream' for creme de leite fresco. If cocoa liqueur is unavailable, a light rum or extra vanilla extract serves as an excellent substitute.

Preparation method

  1. In a mixing bowl, combine the eggs, fresh yeast, butter, sugar, salt, 1 cup of wheat flour, and 1/2 cup of milk.
  2. Form a sponge and let it rest for 5 minutes.
  3. Add the remaining wheat flour and milk, kneading well until you get a soft, homogeneous dough.
  4. Let the dough rest for another 5 minutes.
  5. Shape the sonho pastries and let them rest until they double in volume (approximately 30 minutes).
  6. Deep-fry the sonho in oil at 170°C until golden brown.
  7. Remove the pastries and drain them on paper towels.
  8. Prepare the custard: in a saucepan, mix the whole milk, granulated sugar, strained egg yolks, cornstarch, wheat flour, butter, vanilla extract, and cocoa liqueur.
  9. Cook over medium heat, stirring constantly until it thickens and boils. Continue cooking for 30 seconds after the boil starts.
  10. Allow the custard to cool down.
  11. Prepare the glaze: in a saucepan, combine the water and sugar. Bring to a boil without stirring.
  12. Boil for about 12 minutes, until it reaches the thread stage.
  13. Remove from the heat and pour the syrup onto a cold, slightly dampened marble slab.
  14. Drizzle the lemon juice over the syrup and beat with a wooden spoon, working from the inside out, until a white, homogeneous paste forms.
  15. Shape a small amount of the paste to test the consistency; it should be firm.
  16. Store the glaze in a plastic bag until ready to use, melting it over a bain-marie.
  17. Prepare the chocolate topping: in a saucepan, heat the heavy cream until it boils.
  18. Turn off the heat and stir in the chopped semi-sweet chocolate and unsalted butter.
  19. Stir well until the chocolate is completely melted and the mixture is smooth.
  20. Cut the sonho in half or poke a hole to fill.
  21. Fill the sonho with the vanilla custard and, if desired, with strawberry jam.
  22. Dip the top of the sonho into the melted chocolate and let it set.
