Fluffy white rice (Arroz branco soltinho)

Ingredients
1 tablespoon olive oil

Where to find ingredients
Rice, olive oil, bay leaves and salt are available in supermarkets and general food shops. Onion can be found in supermarkets, produce markets and local vegetable stalls.
Preparation method
- Chop the onion into very small cubes
- Heat the water until it comes to the boil
- Heat a medium pan over low heat
- Add the olive oil and the onion
- Add a pinch of salt
- Sauté the onion for 2 minutes until soft
- Add the bay leaf to the sauté
- Add the rice and stir for 1 minute so the grains are coated in olive oil
- Pour the boiling water over the rice
- Season with the remaining salt and mix gently
- Increase the heat to medium
- Do not stir the rice from this point on
- Wait until the water reaches the level of the grains
- Lower the heat and partially cover the pan
- Cook until you notice that all the water has been absorbed
- Test the doneness by inserting a fork and moving the grains aside at the bottom of the pan
- Leave on the heat for a few more moments if there is still moisture
- Turn off the heat and keep the pan covered for 5 minutes so the steam finishes the cooking
- Gently loosen the grains with a fork before serving
