Where to find ingredients
Black-eyed beans, olive oil, vinegar, salt and pepper are available from supermarkets, markets and general food shops. Red onion, yellow pepper, tomatoes, lemons and fresh coriander can be found at vegetable markets, greengrocers and supermarkets. If yellow pepper is not available, another sweet pepper can be used as a substitute, keeping yellow pepper as the ideal ingredient.
Preparation method
- Place the black-eyed beans in a pressure cooker
- Add 4 cups of water
- Close the pan and place over high heat
- When the cooker starts to whistle, reduce the heat
- Cook for 10 minutes
- Chop the red onion into small cubes
- Remove the seeds from the yellow pepper and cut it into small cubes
- Cut the tomatoes in half, discard the seeds and chop into small cubes
- Wash and finely chop the coriander leaves
- In a large bowl, combine the chopped onion, pepper and tomato
- Turn off the heat after the cooking time and wait for the pressure to release naturally before opening the pan
- Drain the cooked beans in a sieve
- Rinse the beans under cold water to stop the cooking and drain well
- Add the cooked black-eyed beans to the bowl with the chopped vegetables
- Season with the olive oil, white wine vinegar, lemon juice, salt and black pepper
- Gently mix all the ingredients
- Serve the vinaigrette immediately, decorated with fresh coriander leaves
