Preparation method
- Peel the onion and chop it into very small pieces
- Place the water in a kettle and heat over low heat until boiling
- Heat a medium saucepan over low heat
- Add the olive oil and chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion is soft
- Add the bay leaf and rice to the pan
- Stir for approximately 1 minute so that the grains are coated with olive oil, which ensures a fluffy result
- Measure 2 cups (tea) of boiling water and pour over the rice
- Season with the remaining salt and mix
- Increase the heat to medium
- Avoid stirring from this point on
- Wait for the water to dry until it reaches the level of the grains
- Reduce the heat, partially cover the pan
- Cook until all the water is absorbed
- Check the bottom of the pan with a fork to confirm that the water has completely dried
- Turn off the heat
- Add the lime zest
- Cover the pan completely
- Let the rice rest in the steam for 5 minutes
- Use a fork to loosen the grains and incorporate the zest
- Transfer to a bowl and serve immediately
