Ingredients

1 cup (tea) of rice
2 cups (tea) of water
1 tablespoon (soup) of olive oil
1/2 onion
1 bay leaf
1/2 teaspoon (tea) of salt
zest of 1 lime

Preparation method

  1. Peel the onion and chop it into very small pieces
  2. Place the water in a kettle and heat over low heat until boiling
  3. Heat a medium saucepan over low heat
  4. Add the olive oil and chopped onion
  5. Season with a pinch of salt
  6. Sauté for about 2 minutes until the onion is soft
  7. Add the bay leaf and rice to the pan
  8. Stir for approximately 1 minute so that the grains are coated with olive oil, which ensures a fluffy result
  9. Measure 2 cups (tea) of boiling water and pour over the rice
  10. Season with the remaining salt and mix
  11. Increase the heat to medium
  12. Avoid stirring from this point on
  13. Wait for the water to dry until it reaches the level of the grains
  14. Reduce the heat, partially cover the pan
  15. Cook until all the water is absorbed
  16. Check the bottom of the pan with a fork to confirm that the water has completely dried
  17. Turn off the heat
  18. Add the lime zest
  19. Cover the pan completely
  20. Let the rice rest in the steam for 5 minutes
  21. Use a fork to loosen the grains and incorporate the zest
  22. Transfer to a bowl and serve immediately
