400 grams cocoa powder drink mix
2 cans sweetened condensed milk
3 cartons (200 grams each) heavy cream

Where to find ingredients
Eggs, milk, and heavy cream are pantry staples found at any local grocery store. For ground walnuts, look in the baking aisle; if unavailable, purchase whole shelled walnuts and pulse them in a food processor. Sweetened condensed milk is commonly found in the baking or international aisle. Cocoa powder drink mix is available in the breakfast section. Unflavored gelatin is typically found in the baking supplies section near jellies.
Preparation method
- Separate the yolks from the egg whites
- In a cold saucepan, combine the milk and the yolks, straining them through a fine-mesh sieve
- Stir in the cocoa powder drink mix and the sweetened condensed milk
- Place over medium heat and cook for about 15 minutes, stirring constantly until the mixture thickens into a cream
- Remove the pan from the heat
- Fold in the ground walnuts and the heavy cream
- Stir in the previously dissolved gelatin
- Gently fold in the stiffly whipped egg whites until the mixture is uniform and smooth
- Transfer the mixture into a serving dish
- Place in the freezer for about 2 hours until it reaches a perfect mousse consistency
- Check periodically to ensure the mousse doesn't freeze solid
- Garnish the top with whole walnuts before serving
- Keep the remaining dessert in the fridge after serving
Observations
A no-fuss yet sophisticated dessert that’s perfect for finishing off any family meal. The secret to its signature airy texture is folding in the whipped egg whites with plenty of care.
