100g ground walnuts
100g grated bittersweet chocolate
1 cup boiling milk
2 cups all-purpose flour
1 tablespoon baking powder
300g unsalted butter
1 can sweetened condensed milk
3 tablespoons instant coffee granules
1/2 cup brandy
2 cups granulated sugar
100g ground walnuts
100g grated bittersweet chocolate
1 cup boiling milk
2 cups all-purpose flour
1 tablespoon baking powder
300g unsalted butter
1 can sweetened condensed milk
3 tablespoons instant coffee granules
1/2 cup brandy
Where to find ingredients
Most ingredients like eggs, sugar, flour, butter, and walnuts are standard grocery items. For the bittersweet chocolate, look in the baking aisle. Sweetened condensed milk is typically found in the baking or international food section. For the best result with the Brazilian-style coffee filling, use a quality instant coffee (not espresso powder) found in any supermarket coffee aisle.
Preparation method
- Beat the egg whites until stiff peaks form
- Fold in the egg yolks one by one
- Gradually stir in the sugar, ground walnuts, grated chocolate, and boiling milk
- Gently fold in the pre-sifted flour and baking powder
- Transfer the batter to a well-greased round cake tin
- Bake in a preheated oven at 180°C for about 40 minutes
- Remove from the oven, turn out onto a wire rack, and let it cool completely
- For the filling, cream the butter until it reaches a fluffy, smooth consistency
- Dissolve the instant coffee in 1 tablespoon of hot water
- Gradually add the condensed milk and dissolved coffee to the butter, whipping until you have a smooth, homogeneous frosting
- Slice the cooled cake in half and brush the layers with the brandy
- Spread a layer of the frosting in the middle and coat the entire outside of the cake with the remaining cream
Observations
This recipe yields a beautifully balanced and elegant cake. The key to achieving that smooth, professional finish is whipping the butter thoroughly to ensure the frosting is airy, light, and perfectly consistent.
