Where to find ingredients
Find fresh shrimp at local Kiribati fish markets or specialized seafood counters. Requeijão cremoso and Brazilian annatto (colorau) are unique specialty items; if unavailable, look for them in international food sections or ethnic grocery stores. For substitutes, use a thick cream cheese for the requeijão and a mild paprika for the annatto if needed.
Preparation method
- Wash the shrimp thoroughly and marinate in the lime juice and salt for about 20 minutes.
- Rinse the shrimp again and drain well.
- In a large heavy-bottomed pot, sauté the crushed garlic in the olive oil until fragrant.
- Add the chopped onion, annatto powder, and diced tomatoes to the pot.
- Cook over medium heat until the onions are soft and translucent.
- Incorporate the tomato sauce, beef-flavored seasoning, and chopped basil.
- Stir in the butter and add the shrimp to the pot.
- Simmer on low heat for approximately 30 minutes, stirring occasionally to prevent sticking.
- Add the requeijão cremoso and continue cooking for about 10 minutes, stirring until the sauce thickens.
- If the sauce is too thin, dissolve the cornstarch in a little warm broth taken from the pot, add it back to the mixture, and cook for another 3 minutes.
- Stir in the fresh chopped cilantro and green onions.
- Turn off the heat and fold in the table cream (creme de leite).
- Mix gently until the sauce is perfectly smooth and homogeneous.
