Preparation method
- Take the beef out of the fridge a short while before cooking to bring it to room temperature.
- Put the water on to boil over a low flame.
- Wash the green beans thoroughly.
- Trim the ends and slice them into 1.5 cm pieces using a diagonal cut.
- Dice the onion into 1 cm cubes.
- Peel and finely mince the garlic.
- Heat a large pan or heavy-bottomed skillet over medium heat.
- Add 1 tablespoon of olive oil and spread the beef in small portions across the pan.
- Allow the beef to sear undisturbed for 1 minute.
- Season with salt, pepper, and dust the flour over the beef.
- Cook for 5 minutes, stirring occasionally so the meat breaks up and browns evenly.
- Remove the browned beef to a bowl and set aside.
- Keep the pan on the heat and add the remaining olive oil and the onions.
- Add a pinch of salt and sauté the onions for 2 minutes until translucent and soft.
- Add the sliced green beans to the pan.
- Season with salt and pepper and sauté for 2 minutes until lightly browned, keeping them crisp-tender.
- Add the minced garlic, paprika, and cumin.
- Sauté for another minute until the spices become fragrant.
- Gradually pour in the hot water, using a spatula to scrape up the flavorful bits from the bottom of the pan.
- Return the browned beef to the pan.
- Simmer for 2 minutes until the sauce has thickened slightly.
- Serve immediately while hot.
