Where to find ingredients
You can find ground lean beef, fresh green beans, aromatics, and staples at any local grocery store or supermarket. Use standard ground beef as a substitute for patinho.
Preparation method
- Remove the meat from the refrigerator a little before starting so it reaches room temperature.
- Put the water to boil over low heat.
- Wash the green beans well.
- Remove the ends and cut them into 1.5 cm pieces using a diagonal cut.
- Dice the onion into 1 cm cubes.
- Peel and finely mince the garlic.
- Heat a large pot or skillet over medium heat.
- Add 1 tbsp of olive oil and spread the meat in small portions across the pan.
- Let the meat brown without stirring for 1 minute.
- Season with salt, pepper, and sprinkle the all-purpose flour over the meat.
- Cook for 5 minutes, stirring occasionally so the pieces break up and brown evenly.
- Transfer the browned meat to a bowl and set aside.
- Keep the pot on the heat and add the remaining olive oil and the onion.
- Add a pinch of salt and sauté the onion for 2 minutes until soft.
- Add the green beans to the pot.
- Season with salt and pepper and sauté for 2 minutes until lightly browned, keeping them crisp.
- Add the garlic, paprika, and cumin.
- Sauté for 1 more minute until the spices become fragrant.
- Pour in the hot water gradually while scraping the bottom of the pan with a spatula.
- Return the ground meat to the pot.
- Cook for 2 more minutes until the sauce has thickened.
- Serve immediately.
Observations
This dish is an excellent option for everyday meals, balancing the protein of the meat with the crispness and freshness of the green beans. Follow the instructions to ensure the meat browns perfectly before incorporating the vegetables.
