Paprika Chickpeas (Grão de bico com páprica)

Ingredients

1 cup chickpeas
3 cups water (for soaking)
3 cups water (for cooking)
1 bay leaf
1/2 onion
1 garlic clove
1 tsp sweet paprika
1 tbsp olive oil (for sautéing)
Olive oil to taste (for finishing)
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

You can find dried chickpeas, fresh aromatics, and quality paprika in the produce and pantry aisles of local supermarkets or at neighborhood markets in towns across the island.

Preparation method

  1. Place the chickpeas in a large bowl.
  2. Cover with the three cups of water.
  3. Cover and let the beans soak for eight hours.
  4. Discard the soaking water and transfer the chickpeas to a pressure cooker.
  5. Add the three cups of fresh water and the bay leaf.
  6. Seal the pressure cooker and place over high heat.
  7. Once it reaches pressure, reduce the heat and cook for 25 minutes.
  8. Turn off the heat and wait for the pressure to release naturally before opening.
  9. Finely dice the onion and garlic.
  10. Heat the olive oil in a skillet over medium heat.
  11. Sauté the onion with a pinch of salt for five minutes until golden.
  12. Add the garlic and paprika and sauté for one minute.
  13. Add two ladles of the cooked chickpeas with a bit of the liquid into the skillet.
  14. Mash these chickpeas with a spatula until they form a coarse purée.
  15. Stir this creamy mixture back into the remaining chickpeas in the pressure cooker.
  16. Simmer over medium heat, uncovered, for an additional 10 minutes.
  17. Season to taste with salt and black pepper.
  18. Drizzle with a little olive oil just before serving.

Observations

This is an excellent option for everyday meals, perfectly balancing healthy ingredients with simple cooking techniques. The secret to achieving a rich, velvety consistency in the sauce is to mash a small portion of the cooked chickpeas before finishing the dish.
