Pressure Cooker Braised Beef (Carne de panela de pressão)

Ingredients

1 kg beef (chuck, shoulder, or shin) or pork loin, cut into large cubes
Optional: medium potatoes, peeled and sliced into thick rounds
3 to 4 beef stock cubes
8 large onions, cut into thick rings

Where to find ingredients

Beef and vegetables are readily available at local sabzi mandis (vegetable markets) and meat shops (butcher counters). For stock cubes, check the spice or grocery aisle in supermarkets. If local beef cuts are unavailable, any standard stewing beef works as an alternative.

Preparation method

  1. Line the base of the pressure cooker with half of the onion rings.
  2. Crumble 1 or 2 beef stock cubes over the layer of onions.
  3. Place the meat cubes on top of the onions.
  4. Season the meat with the remaining crumbled stock cubes.
  5. Cover the meat with the remaining onion rings.
  6. Seal the pressure cooker and cook over medium heat for approximately 25 minutes once pressure is reached.
  7. Turn off the heat and allow the pressure to release naturally.
  8. If choosing to add potatoes, remove the top layer of onions, add the potato slices, re-seal the pot, and cook for another 10 minutes once pressure is reached.
  9. Wait for the pressure to release naturally before opening the lid.

Observations

Pressure-cooked beef is a quintessential comfort food in Brazilian homes. Its convenience and the way the meat becomes fork-tender make it an ideal choice for busy weeknight dinners. Using just a few pantry staples and the efficiency of a pressure cooker, you can achieve deep, savory flavors and a texture that everyone loves. This dish acts as a versatile base that pairs perfectly with steamed white rice and a crisp, fresh side salad.
