Hearty Tripe and White Bean Stew (Dobradinha a)

Ingredients

500g cleaned tripe
500g white beans
500g fresh pork ribs
500g chicken thighs and drumsticks
200g bacon, diced
1 large onion, finely chopped
5 garlic cloves, minced
500g potatoes, cubed
500ml chicken stock
Fresh parsley, chopped to taste

Where to find ingredients

You can find high-quality tripe at local butchers (butcher shops) where cleaning services are often provided. White beans and general produce are available at neighborhood sabzi mandis or local supermarkets. If farofa is unavailable, toasted semolina or breadcrumbs seasoned with spices make a suitable substitute.

Preparation method

  1. Boil the white beans in a standard pot until tender.
  2. Drain the cooked beans and set them aside.
  3. Pressure cook or boil the tripe in water for approximately 40 minutes.
  4. Drain the tripe thoroughly and set aside.
  5. In a large heavy-bottomed pot, fry the bacon until it turns crispy and golden.
  6. Add the chopped onion and minced garlic to the bacon and sauté until translucent and lightly golden.
  7. Add the pork ribs and chicken pieces to the pot.
  8. Sear the meats thoroughly until browned on all sides.
  9. Pour the chicken stock over the browned meat.
  10. Simmer the meat until it reaches an al dente stage.
  11. Combine the cooked white beans and prepared tripe with the meat in the pot.
  12. Add the cubed potatoes.
  13. Continue to cook everything together until the potatoes are tender and the gravy has thickened and concentrated.
  14. Finish by garnishing with freshly chopped parsley.
  15. Serve hot alongside steamed white rice and farofa.

Observations

This robust stew makes for a perfect, soul-warming family meal. The secret to an authentic result lies in the patient, meticulous cooking of the meats, ensuring they become meltingly tender and fully infused with spices to create a thick, savory base.
