Preparation method
- Peel the pumpkin and cut the flesh into roughly 2cm cubes.
- Finely mince the garlic cloves.
- Place a large saucepan or frying pan over medium heat with the olive oil.
- Add the garlic and sauté for 1 minute just to fragrance the oil, being careful not to let it brown.
- Add the pumpkin cubes and salt to the pan.
- Stir the ingredients occasionally for 10 minutes, until the pumpkin begins to soften.
- Place the lid on the pan and reduce the heat to the lowest setting.
- Cook for 5 minutes to allow the pumpkin to finish softening in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your preferred consistency.
- Turn off the heat and serve immediately.
