8 radishes
2 carrots
3 tablespoons olive oil
1 1/2 teaspoons paprika
Salt and freshly ground black pepper to taste
8 radishes
2 carrots
3 tablespoons olive oil
1 1/2 teaspoons paprika
Salt and freshly ground black pepper to taste
Where to find ingredients
You can find all fresh produce and pantry staples at local supermarkets or independent greengrocers. If specific radish varieties are unavailable, any standard red radish is suitable.
Preparation method
- Preheat the oven to 220 ºC
- Wash the cauliflower florets in a bowl of water
- Remove the florets from the water with your hands so that any dirt remains at the bottom of the container
- Drain well in a colander
- Clean the radish skins thoroughly with a small brush under running water
- Dry the radishes and cut them in half, or into quarters if they are large
- Peel the carrots and cut them in half widthwise
- Cut the thinner part of the carrot into four lengthwise strips
- Cut the thicker part of the carrot into six lengthwise strips
- Distribute all the vegetables in a large baking tray
- Drizzle the vegetables with the olive oil
- Sprinkle with the paprika, salt, and black pepper
- Toss everything very well to ensure each piece is coated with the seasoning and oil
- Spread the vegetables out on the tray, leaving space between them so they roast evenly and get nicely browned
- Roast in the oven for approximately 30 minutes
- Turn the vegetables with a spatula halfway through the cooking time to brown all sides
- Remove from the oven once they are tender and golden
- Serve immediately
