Preparation method
- Wash the courgette thoroughly under running water using a vegetable brush
- Dry with a clean kitchen cloth
- Trim and discard the ends
- Cut the courgette crosswise to separate the thickest part from the thinner end
- Slice the thick section in half lengthwise and cut each half into three strips to create batons
- Cut the thinner section in half crosswise so that all pieces are of a similar size
- Cut each of these remaining pieces into four segments
- Heat a non-stick frying pan over medium heat
- Add a drizzle of olive oil and arrange the courgette pieces cut-side down
- Sear for about 2 minutes until golden brown
- Lightly crush the coriander seeds in a pestle and mortar to release their aroma
- Turn the batons with tongs to brown the opposite side
- Add the crushed coriander seeds, season with salt, and add a little more olive oil
- Sauté for a further 1 minute until the courgette is tender and well-seasoned
- Finish by removing from the heat and folding in the lemon juice
- Serve immediately
