Where to find ingredients
You will find all fresh produce, such as onions, bell peppers, tomatoes, and parsley in the fruit and veg aisle of any major Irish supermarket like Dunnes, Tesco, or SuperValu. Plain flour, sugar, dried yeast, and vegetable oil are staple pantry items found in the baking section. For the sausages, any standard pork sausage from the meat counter will work perfectly. Passata is the best substitute for the tomato sauce, easily found in the pasta sauce aisle alongside ketchup and mustard. If you're short on time for the optional mash, you can use a high-quality pre-made mash from the chiller or a quick instant mix.
Preparation method
- Crack the eggs into a blender
- Add the fresh chopped parsley
- Pour in the milk
- Add the vegetable oil
- Add the salt
- Add the dried yeast and sugar to the blender and blitz until smooth
- Pour the mixture into a large mixing bowl and gradually stir in the plain flour
- Knead the dough well until it reaches a smooth, consistent texture and stops sticking to your hands
- Cover the bowl with a tea towel and leave the dough to prove in a warm spot for one hour
- Meanwhile, sauté the diced onion in a frying pan until softened
- Stir in the diced bell pepper and the chopped tomatoes
- Pour the tomato sauce into the pan
- Stir in the mustard and ketchup until well combined
- Season to your liking, add the sliced sausages to the sauce, and simmer until the filling is cooked through
- Line a baking tin with half of the prepared dough, spreading it out to cover the base
- Spread the optional mashed potato layer evenly over the bottom layer of dough
- Spread the sausage filling mixture evenly on top
- Cover everything with the remaining dough to create a lid
- Brush a little beaten egg yolk over the top of the pie to ensure a golden-brown finish when baked
- Bake in a preheated oven at a moderate heat for 40 minutes
Observations
This comforting bake is essentially a savoury pie with a tender, fluffy crust and a rich, saucy sausage filling. It is a fantastic family-friendly meal that is easy to put together for a relaxed weekend dinner or a substantial snack.
