Ingredients
200 ml coconut milk
3 eggs
500 ml milk
250 ml vegetable oil
1 1/2 cups all-purpose flour
3 tablespoons cornstarch
1 tablespoon baking powder
Salt to taste
1 medium onion, finely chopped
10 green olives, chopped
1 cup tomato sauce
1 tablespoon dried oregano
250 g ham, chopped
300 g mozzarella cheese, chopped
Margarine for greasing
All-purpose flour for dusting
Grated parmesan cheese to taste
Oregano to taste

Where to find ingredients
Find your ingredients at any local supermarket. For the 'Bauru de Forno' staples, look for standard ham and mozzarella in the deli section. Coconut milk is readily available in the tinned goods aisle. If you can't find specific Brazilian-style tomato sauce, a good quality bottled marinara or simple tomato purée works perfectly fine. Parmesan can be bought pre-grated or as a block in the cheese aisle.
Preparation method
- Blitz the coconut milk, eggs, milk, oil, flour, cornstarch, baking powder, and a pinch of salt in a blender until the batter is nice and smooth
- Set the batter aside
- In a separate bowl, toss together the chopped onion, chopped olives, tomato sauce, 1 tablespoon of oregano, and salt to taste
- Set the filling mixture aside
- Grease a rectangular baking tin (about 28 cm x 19 cm x 5 cm) with margarine and lightly dust it with flour
- Pour about half of the prepared batter into the baking tin
- Evenly layer the chopped ham, mozzarella, and the tomato sauce mixture over the base of the batter
- Pour the remaining batter over the top to cover the filling completely
- Sprinkle a generous amount of grated parmesan and extra oregano over the top
- Pop it into a preheated oven at medium heat (180°C) and bake for about 45 minutes, or until the top is beautifully golden and the centre is firm
