Where to find ingredients
Condensed milk, cream, sugar and passion fruit juice are available in supermarkets and larger grocery shops. Fresh passion fruit can be found at markets and produce stalls; bottled concentrated passion fruit juice is acceptable for the mousse, while fresh pulp is best for the topping.
Preparation method
- In a blender, add the condensed milk, cream and concentrated passion fruit juice
- Blend until the mixture is smooth and creamy
- Transfer the mixture to a nice serving dish or to individual cups
- Refrigerate for at least 2 hours, or until well set
- If you want to speed it up, you can place it in the freezer for about 30-40 minutes
- While the mousse chills, prepare the syrup: in a pan, mix the sugar and water
- Place over medium heat and cook until the sugar dissolves and forms a thread-stage syrup
- Add the passion fruit pulp to the syrup, stirring gently
- Cook for another 1 or 2 minutes, just to warm through and bring the flavours together
- Remove from the heat
- Once the mousse is firm, pour the passion fruit syrup over the top before serving
