Where to find ingredients
For the essential Brazilian ingredients: Look for 'Goiabada' (guava paste) and 'Minas cheese' (queijo minas) at specialty Latin American grocers or online international food stores. If you cannot find fresh Minas cheese, a firm, mild, salty-sweet fresh cow's milk cheese or a mild queso fresco is the closest available substitute to keep the authentic profile. Cream cheese, caster sugar, eggs, butter, and all-purpose flour are readily available in any standard supermarket dairy or baking aisle.
Preparation method
- Preheat your oven to 180°C
- Grease your ramekins with butter and lightly dust with flour, then set aside
- In a mixing bowl, whisk the eggs and sugar together until the mixture is smooth and well-combined
- Stir in the grated Minas cheese, ensuring it is evenly distributed throughout the mixture
- Add the cream cheese and melted butter, whisking until the batter is uniform
- Gradually fold in the flour, mixing gently until you have a smooth, lump-free batter
- Spoon the batter into the prepared ramekins, filling each one just over halfway
- Place a cube of goiabada in the centre of each portion of batter
- Cover with the remaining batter, ensuring it does not overflow past the rim
- Bake in the preheated oven for about 5 minutes, until the edges are set but the centre remains soft and molten
- Carefully remove from the oven, unmould while still warm, and serve immediately
- Pair with a little guava purée or passion fruit coulis if you want an extra touch of acidity
Observations
This dessert brings together the classic Brazilian 'Romeo and Juliet' flavour profile, pairing the mild tang of cheese with the sweet intensity of guava paste (goiabada). It is a luxurious treat featuring a velvety texture and a molten, lava-like centre that flows beautifully when sliced. Simple to put together, it is the perfect showstopper for a dinner party or a sophisticated midweek indulgence.
