Creamy Meat-Filled Potato Mash Pie (Escondidinho)

Ingredients

1 tbsp fresh parsley, chopped
1 stock cube (beef or chicken)
Milk to taste
200ml single cream
Red chilli flakes or black pepper to taste
Mozzarella cheese, to taste
1 tbsp spring onions, chopped
Salt to taste
1 small onion, finely chopped or grated
2 garlic cloves, crushed
700g cassava (mandioca), boiled in salted water
1 tbsp butter
1 medium onion, sliced into rings
Bacon to taste
2 tbsp butter or olive oil
500g cured dried beef (carne seca), boiled and shredded
300g potatoes, boiled in salted water
Cream cheese (requeijão), as needed

Where to find ingredients

Cassava (mandioca) and cured dried beef (carne seca) can be found at specialist international grocers; substitute potatoes if cassava is unavailable. Standard produce and dairy are available at any local supermarket.

Preparation method

  1. Mash the boiled cassava and potatoes together with the butter until you achieve a very smooth consistency.
  2. Stir in the onion, stock cube, and single cream, then gradually add milk until the mash is creamy and thick.
  3. Taste the mash and adjust the salt if necessary.
  4. Fry the bacon, garlic, and onion in a saucepan.
  5. Add the shredded dried beef and sauté for a few more minutes.
  6. Finish the filling by folding in the fresh parsley, spring onions, and seasoning with the pepper.
  7. Check the seasoning of the filling.
  8. Lightly grease a baking dish with butter on the bottom and sides.
  9. Spread the meat mixture at the bottom of the dish and cover with slices of mozzarella.
  10. Spread the prepared mash over the layer of cheese.
  11. Distribute small portions of cream cheese over the top of the mash or swirl it into the mixture.
  12. Sprinkle with grated hard cheese if you prefer a crunchier top.
  13. Bake in the oven for about 20 minutes or until the mash is slightly golden.
  14. Keep an eye on the dish to ensure the bottom does not burn during the baking process.

Observations

This recipe results in a deeply satisfying and flavourful meal. The technique of layering the smooth mash over the seasoned beef ensures a wonderful texture, while the melted cheese topping provides a golden, irresistible finish.
