Ingredients
300g plain flour
200g butter
100g caster sugar
1 egg yolk
2 tablespoons red wine (divided)
6 tart red apples (1kg)
100g seedless sultanas
200g butter
100g caster sugar
1 egg yolk
2 tablespoons red wine (divided)
6 tart red apples (1kg)
100g seedless sultanas
Where to find ingredients
You will find plain flour, caster sugar, and sultanas in the baking aisle of any local supermarket. Look for high-quality, chilled block butter in the dairy section for the best results. For the red wine, any affordable, dry red table wine stocked in local grocery shops will add the right depth of flavour. Choose crisp, tart-variety apples from the fresh produce market or supermarket fruit section.
Preparation method
- Cream the butter and sugar together until the mixture is smooth and pale
- Whisk in the egg yolk and one tablespoon of red wine to the mixture
- Gently fold in the flour, a little at a time, to form the dough
- Knead the dough briefly until it is uniform throughout
- Note that the dough will naturally feel slightly oily and tacky to the touch
- Divide the dough into two portions: one large piece (two-thirds) and one smaller piece (one-third)
- Wrap both portions and leave them to rest in the fridge for 30 minutes
- Peel the apples and slice them into even, medium-sized segments
- Toss the sliced apples with the remaining tablespoon of red wine and the sultanas
- Steam the apple and sultana mixture gently until the fruit is just tender
- Press the larger portion of dough into the base and up the sides of a springform cake tin
- Evenly spread the apple filling over the prepared pastry base
- Roll the remaining piece of dough into thin, rope-like strands
- Lay these strands over the apple filling to form a decorative lattice grid
- Bake in a preheated oven at medium heat until the pastry is golden and cooked through
Observations
This traditional favourite combines a tender, melt-in-the-mouth pastry with a fragrant filling of tart apples and plump sultanas. It is the perfect accompaniment to an afternoon cup of tea or a simple, elegant finish to any family gathering.
